Cugnetto comes from a family of restaurateurs and he is also known as a food and beverages guru. He has worked in several luxury hotels in different parts of the world including the Caribbean, Maldives, and London.

He became the director of food and beverages in 2007 for Starwood Hotels and Resorts for three years. Later, in November 2010 he served in the same position for Antara Hotels in Bangkok. 

In 2015, Gianluca was appointed as the general manager at a UK-based hotel Du Vin. Previously, he held dictatorships at The Sheraton and Le Méridien in Dubai.
